Look at this canvas bag I found to put on my cutting table and be all organized. Now the other picture I'm going to show is a little blurry, sorry. What is so neat about this holder, which is an electricians bag, it was only $7.99 at Harbor Freight. Just wanted to share with you.
I just loaded it with a few things, I'll get it more organized.
Dawn's Little Mittens
Dawn Edmonson has been published several times in the Somerset Magazines, which I love to get. She had the cutest mittens and rag balls in this issue and thought I would show a few I had made. Gather on both sides of the 2-1/2" X WOF for heirloom puffing. Pin to 2-1/4" X 19" piece and gather to fit. I find it better to have the lining a 1/4" smaller than the heirloom puffing piece. After sewing both long sides close to edge, just to secure all the gathered edge, sew seams to form circle. Pin edges right sides together, Log Cabin block, oh it's not a block anymore, (circle) to heirloom puffing piece and sew a 3/8" seam. Be sure and leave an opening for turning on one side. Stuff it tight and add a button in the center. I sewed two antique glass button and pulled it tight in the middle.

OK, first I had to taste the roast last night.
No, I didn't eat it all, I cut it from the bone and we can make sandwiches or have it for a meal. It is good. Just finished it in the crock pot and it still has that smoky flavor.
Now layer tortillas on the bottom of your pan, I like to cover the whole bottom and spread the refried beans on tortillas. One large can is enough for both casseroles.
Add a layer of cooked chicken and cheese.
Another layer of tortillas, chicken, rotel tomatoes and cheese. A large can is for both casseroles. If you don't like spicy food add regular tomatoes.
Another layer of tortillas, enchilada sauce, and more cheese. I forgot to tell you I took all the calories out of this one. It is now ready to freeze. Just pop it in the oven at 350 for about 30 minutes. Don't let your cheese burn on top...
Chicken and Spaghetti
This is what I put in mine, I know there are a lot of varieties on this recipe. Remember the chickens I roasted, I deboned them and kept some of the juice. You can take all the grease off after it has been in the icebox overnight. Add celery, onion, bell peppers from DH garden (they were in my freezer), carrots, mushroom soup and seasonings. Mine consist of TexJoy, red pepper, garlic, parsley. Add all this together and simmer for about an hour, then add cheese. Let this cool, put in containers and freeze. When you are ready just cook your spaghetti and add chicken mixture.

Mexican Casserole, Chicken and Spaghetti and a Smoked Pork Roast, Kinda, Sorta the Recipe and it will continue!
I forgot to take a picture of the tortillas...but here is what you will need. Now, I am making enough for 2 large pans to be frozen.

Don't ya just wish I would finish something.
Next is the roast I put on a pit and smoked it for about 1-1/2 hours. Well the thing was so big it didn't finish cooking so I put it in the crock pot. I'll let you know how it turns out. I seasoned it with Worcestershire Sauce, Honey, Garlic, Red Pepper, dried onion and Salt. Boy it smells good. What does Emeril say, "You should get smell-a-vision." Maybe there should be "Smell-a-blogging"
