Mexican Casserole, Chicken and Spaghetti and a Smoked Pork Roast, Kinda, Sorta the Recipe and it will continue!

OK, my day did not go as planned...
I forgot to Marinate the chicken earlier, so the chicken is in the icebox tonight. So, I'm listing all of the ingredients and posting some pictures and then I will be able to finish it up tomorrow. There will be 3 recipes, "Mexican Casserole", "Chicken and Spaghetti" and a "Smoked Pork Roast"

I forgot to take a picture of the tortillas...but here is what you will need. Now, I am making enough for 2 large pans to be frozen.
Some type of Fajita Marinating Sauce or you can even use the dry seasoning-enough to cover and coat chicken.
2 Cans of Enchilada Sauce
1 Large Can of Refried Beans
1 Large Can of Rotel Tomatoes
Flour Tortillas
1 Large Package of Skinless-Boneless Chicken Breast
2 TB Dried Cilantro
1 TB Ground Cumin
Shredded Cheese
Onion if you would like it, we do
You can just 1/2 this if you would like just one pan. I love to make one and put one in the freezer for a day I don't want to cook.
Now, cut your chicken and put in a container to marinate. Add fajita seasoning, Cilantro, Ground Cumin and I add a little bit of black pepper. I then let this marinate all night.

This will continue tomorrow...
This picture is the chickens I roasted for my Chicken and Spaghetti-I will debone them and will continue this tomorrow also.

Don't ya just wish I would finish something.

Next is the roast I put on a pit and smoked it for about 1-1/2 hours. Well the thing was so big it didn't finish cooking so I put it in the crock pot. I'll let you know how it turns out. I seasoned it with Worcestershire Sauce, Honey, Garlic, Red Pepper, dried onion and Salt. Boy it smells good. What does Emeril say, "You should get smell-a-vision." Maybe there should be "Smell-a-blogging"

Everything looks SO GOOD...how about I just come over and enjoy the good cooking...IF I were VERY, Very rich I think I would have a chef :) I would appreciate all your hard work, making those yummy meals..gotta go get me something to eat :)
