And the Winner Is----Finished Recipe's

The winner is, wait a minute, I think I'll give you the recipes first.

OK, first I had to taste the roast last night.

No, I didn't eat it all, I cut it from the bone and we can make sandwiches or have it for a meal. It is good. Just finished it in the crock pot and it still has that smoky flavor.
Now for the chicken enchilada's. The chicken that marinated all night and soaked up all the seasonings-Cook in sauce pan and add onions,(if desired)

Now layer tortillas on the bottom of your pan, I like to cover the whole bottom and spread the refried beans on tortillas. One large can is enough for both casseroles.

Add a layer of cooked chicken and cheese.

Another layer of tortillas, chicken, rotel tomatoes and cheese. A large can is for both casseroles. If you don't like spicy food add regular tomatoes.


Another layer of tortillas, enchilada sauce, and more cheese. I forgot to tell you I took all the calories out of this one. It is now ready to freeze. Just pop it in the oven at 350 for about 30 minutes. Don't let your cheese burn on top...


Chicken and Spaghetti



This is what I put in mine, I know there are a lot of varieties on this recipe. Remember the chickens I roasted, I deboned them and kept some of the juice. You can take all the grease off after it has been in the icebox overnight. Add celery, onion, bell peppers from DH garden (they were in my freezer), carrots, mushroom soup and seasonings. Mine consist of TexJoy, red pepper, garlic, parsley. Add all this together and simmer for about an hour, then add cheese. Let this cool, put in containers and freeze. When you are ready just cook your spaghetti and add chicken mixture.

I had to laugh, you referred to the ice box. You and are neither one old enough to have used one. According to Wikipedia, they went out when refrigerators and electricity came in about 1930.

Bonnie,
I just changed my purse over to your lovely halloween bag that I won from you. I kid you not, as I walked around town running my errands I had people literally stop me and ask where I bought my bag. One girl asked if she could buy it from me, well sort of, she kept hinting at how much she wished she could have it. I clutched it a little tighter, visions of her hitting me over the head and running off with MY darling bag. Seriously you should make a ton of those and sell them. Just thought I would let you know how much fun I am having with your generous gift.
