Banana Nut Bread, Yumo!!!

Thought I would give you a great Banana Nut Bread recipe my husband loves. We're on a diet so we have to eat healthy. Banana's are healthy aren't they?

I came back from our sewing group Treasured Friends and put this in the oven. I would say I sewed a lot but I forgot my cord to my machine. Can you believe it. Too many projects going on in this head of mine. Leave for Canton next Wednesday and will post a picture of all the things I've been sewing on.


Banana Nut Bread


1/2 cup shortening

1 cup sugar

2 eggs

1 cup mashed ripe bananas

1/4 cup chopped nuts

2 cups all-purpose flour

1 teaspoon soda

1/4 teaspoon salt

1/2 teaspoon vanilla


Cream shortening and sugar until light and fluffy. Add eggs and beat well. Stir in mashed bananas, vanilla and mix well. Stir in nuts. Add Dry ingredients and stir in. Pour into greased loaf pan and bake at 350 degree for 40 minutes. Yield: 1 loaf.

Now I wish I'd picked up some overripe bananas while I was in town.
Oh, I felt for you about leaving your cord home. Don't you hate it when things like that happen? Sometimes it is nice to just sit and visit, but I only get out to a quilt group once a month (today was the day) and I count on getting so much done!

I love banana bread! I will have to try your recipe. And, yes, bananas are healthy. In the new weight watcher program they are zero points. Just thought I would throw that little fact in. Can't wait to see everything you are working on. I can relate about your sewing machine cord. I was taking a class and forgot mine. I couldn't believe it.

What kind of shortening do you use for this recipe?

what kind of shortening can you use for this? Margarine or does it have to be crisco white shortening of that type?

Anita, I'm sorry I couldn't find your email address, but I use the crisco stick, sometimes plain and sometimes the butter flavor. I prefer the butter flavor.
